Ooh...colors!

As promised, here is another salad recipe.

This time...pasta salad! I brought this to work for my lunch today, and it was super convenient--no microwaving necessary. In fact, it tasted really good cold!!

This recipe is what I threw together, but the best part is that it can be tweaked to your liking. :)

Pasta Salad

Ingredients:
  • 1/2 cup cooked pasta
  • frozen green beans, thawed
  • 1 tomato
  • 1/2 avocado
  • 1/4 can black beans
  • green onions
  • sunflower seeds, toasted
  • balsamic vinaigrette
  • black pepper to taste

Pasta.

Green beans.

Tomatoes and green onions.

Avocado.

Beans and sunflower seeds.

Dress and toss.

I should have called this rainbow salad...heh. Isn't it nice to look at?

I prepared for potentially getting hungry a few hours after lunch.

Aaaand, my news of the day (actually more like yesterday): I made my own almond butter!! I've seen recipes for it all over the place, but for some reason, I never got around to trying it. It was SO easy: toast almonds for 5-10 minutes in the oven at 350F, let them cool, and stick them in the food processor. To make it more interesting, you can add mix-ins of your choice! For example: chocolate, maple syrup, brown sugar, salt, coconut, etc. The possibilities are endless!

Of course, I made coconut almond butter.


Sorry, TJ's, but I'm probably never purchasing AB ever again. :)

That salad looks great! Elements I never would have thought to combine: Avocado + Green Beans!

Thank you!! Yes--I tend to throw together some interesting combinations...but it definitely worked!
