Fall Baking Extravaganza--Part II

My current obsession:

Healthy Pumpkin Bars topped with coconut milk fudge* and SunButter.

And now I really can't stop eating these. Especially after heating them up for ~30 seconds. Yumyum.

*Coconut milk fudge: 1 cup canned coconut milk and 1 bar of the darkest of dark chocolates (86% cacao!) heated and mixed together.

Tuesdays are my rough days at school-- I have class for almost 9 hours straight. And since I need to eat every few hours, I bring lots of snacks with me. But I'm quite over the granola bar phase of my life, and sometimes I don't feel like peeling an orange in the middle of class (it's messy and inconvenient!). So I thought that today, whilst doing my homework, I'd make some Apple Chips. Sweet, healthy, and most of all, convenient to take to school tomorrow!

First I cut thin slices of green apple and mixed them around with some lemon juice.


Then I spread them out on a baking pan and sprinkled cinnamon and nutmeg on each slice.


I put these in the oven (200 degrees). After 30 minutes, I flipped them over. Baking time depends on the thinness of the slices. I waited another 30 minutes before flipping them over again.


The really thin ones already started to curl. So I took one of them...just to test it out!

(I was highly unsatisfied with the nighttime picture quality).

But that apple chip was tasty and crispy (with still a slight juiciness to it)!

Wow- your "current obsession" has my name written all over it, as well :) LOVE coconut and pumpkin together. I've made coconut chocolate fudge before. In fact, I just made the best choco-coco almond balls :)
