Creamy and dreamy.

This is going to blow your mind.

Just like the time your mind was blown with the fauxtatoes.

But...this time, prepare for mind blowing^100.

Excuse the drama. But seriously.


The Healthiest (High Protein) Vegan Alfredo Sauce (Ever)


Ingredients:
  • 1 head cauliflower
  • 1 can garbanzo beans
  • 2 cups vegetable broth + 2 cups water (or 4 cups water + 1 bouillon cube)
  • 1 1/2 tablespoons olive oil
  • 3 cloves garlic
  • salt/pepper/Italian seasoning

Gather your ingredients. And admire the size of the cauliflower.


This was either a really small cauliflower or a really large tomato. Note: tomato is not one of the ingredients necessary for this recipe, in case this picture confused you.

Chop the cauliflower and cook it. I cooked it in the microwave for 8 minutes with a few splashes of water.


In a large pot, heat the vegetable broth on the stove over medium and add the olive oil, chopped garlic, cauliflower, and garbanzo beans.


Blend thoroughly with a hand blender. A regular blender would also work, but this mixture is so thick that it might not be as efficient.

Add the salt/pepper/Italian seasoning, and the alfredo sauce is complete!


I decided the meal wasn't complete until the whole wheat pasta + alfredo sauce was served with some sauteed kale (kale + garlic + olive oil).


This meal is packed with nutrients. And absolutely delish! The alfredo sauce is so creamy, you will seriously doubt the fact that no cream was included. 


And you will seriously doubt that this is healthy. For realz. Enjoy!!
