I was looking forward to eating these all day.
First, I heated some vegetable oil and added cumin seeds and garlic. Then I added Morningstar "crumbles", black beans, and a chopped tomato.
I chopped some cabbage, and mixed in lemon juice and a pinch of salt.
Toppings = complete! I heated a few corn tortillas on the skillet, added some shredded cheese, the bean mixture, and topped it with some cabbage.
Finished it off with some spicy salsa on top, and enjoyed thoroughly!
There you have it, a super quick and easy meal. Now I'm off to go study and drink some iced toddy at a nearby coffee shop! (If you haven't tried toddy, and you like coffee, I highly recommend it!)
